Featured Chef: The Bench at Pebble Beach Chef Aaron Burns
Location: The Lodge at Pebble Beach

Few things are as simple and satisfying as a delicious pizza, and Chef Burns will teach you how to upgrade your traditional creation into a show-stopping flatbread entrée. Discuss what makes the perfect dough (including gluten-free), along with variables in cooking across wood, gas, charcoal and electric equipment. After a tutorial on basic sauces and selecting the best foundation for a flatbread, you will also participate in a hands-on rolling demonstration, while learning to embrace the creativity of ingredients from your garden or local farmer’s market.

Preparing and cooking fish is an underestimated art, and Chef Tummel will tour you through all you need to know to purchase and filet your catch of the day. Pick up tips for buying fish from various locations including farmer’s markets, the grocery store and wharf, before learning about farmed vs. line-caught selections and sustainability. Sharpen your prep skills with a basic filet lesson and demonstration that ranges from flounder to salmon, teaching you how to save time and money while increasing your enjoyment of these key culinary techniques.

The key to indulgence is balance, and this demonstration will teach you how to have all-day energy the natural way. Through juicing, nutritious additives, natural sugar sources, creative food purees and plant-based proteins, a healthy addition to your epicurean palate is within reach. Led by Chef Nemec, you will also learn how to select the correct juicer and blender for your needs, while taking part in hands-on juicing and blending of raw products with different equipment. The perfect way to fuel your culinary journey at Pebble Beach.

Sushi has become one of the culinary world’s most social and artistic dining experiences, and Chef Mellin will equip you with the tools of the trade to liven up your sushi creations. Learn about rice type and preparation; fish, nori and vegetable options; and the sauces and wasabis that best complement the dish. You will also experience the various types of sushi, sashimi, nigiri, hand rolls and maki rolls, along with the important role that chopsticks and other accessories play to create and enjoy this type of cuisine.
