Pebble Beach Eats: Roy’s Lobster Sandwich

Being a New England native, The Inn at Spanish Bay General Manager Rod Schinnerer was on a mission to find the best Lobster Roll in Monterey County.

When he struck out, Schinnerer enlisted the Roy’s at Pebble Beach Culinary Team to make it.

So Schinnerer, Spanish Bay Executive Chef Rodney Uncango and Roy’s Chef de Cuisine Pablo Mellin went to work. They tried different breads, different lobster and different ingredients.

One was Italian inspired, the next a Hawaiian homage. There was a spicy Mexican mix, an Asian Fusion foray and even an Indian interpretation.

But the more exotic sandwiches overpowered the best part — the lobster!

So in the end, they settled on an authentic New England style — think clam chowder (heaping with Maine lobster) in a roll.

The sandwich is hugged by a savory garlic roll, and complemented by a baby green salad tossed in a Hawaiian-style creamy herb vinaigrette.

“I’m proud of this sandwich,” Mellin says. “It’s just simple, fresh ingredients, just the way I like it.”
